Yellow Tea

Yellow tea is specific to China. Sources mention that it was the first tea to be found as lose tea in the 16th century. There are mainly 2 sorts, one with small leaves, one with large leaves, the best one being the one with small leaves. The production of yellow tea is quite small and the tea is rarely exported outside of China.

The transformation process:
The transformation process resembles green tea's but with an additional step. After the leaves are fired in a wok, they will be spread out on bamboo braids covered with straw. They will last the whole day and a light fermentation will take place. This last step reduces the green vegetal flavour from the tea.
