Tips and advice - Making the perfect brew

Tea is a life-long learning. This is one of the thing that makes tea so fascinating. We have captured here many facts and tips that will help you in the quest of the perfect brew....

Brewing the perfect tea

White tea

1. Bring water to a boil and let the temperature go down to 75-80 degrees celsius. If you do not have a thermometer, here is a simple tip, transfer the water from one pot to the other 2 to 3 times and it will bring the water to the right temperature.
2. Warm your teapot by pouring the hot water in.
3. Put the right quantity of tea in the pot. Pour a bit of water in it and discard the water right away. It will open the leaves for the first brew.
4. Fill the pot with hot water and let it steep, please follow the indications regarding the length of steeping.
5. Your infusion is ready, you can now enjoy your tea.
6. For the next brewings (2-4), adjust the steeping time ( at least 10 seconds more each time)

White tea is a very fine tea that does not like boiling water. Pay attention to the water temperature and you will enjoy a delicious tea.

Green tea ( China)

1. Bring water to a boil and let the temperature go down to 75-85 degrees celsius. If you do not have a thermometer, here is a simple tip, transfer the water from one pot to the other 2 times and it will bring the water to the right temperature.

6. For the next brewings (2-4), adjust the steeping time ( at least 10 seconds more each time).

If your green tea has a bitter taste, you probably need to adjust 2 things, either is the water temperature too high or you have steeped the tea for too long.

Green tea ( Japan)

Oolong tea

1. Bring water to a boil and let the temperature go down to 85-95 degrees celsius. If you do not have a thermometer, here is a simple tip, transfer the water from one pot to the other 1 time and it will bring the water to the right temperature.
2. Warm your teapot by pouring the hot water in.
3. Put the right quantity of tea in the pot. Pour a bit of water in it and discard the water right away. It will open the leaves for the first brew.
4. Fill the pot with hot water and let it steep, please follow the indications regarding the length of steeping.
5. Your infusion is ready, you can now enjoy your tea.
6. For the next brewings (2-4), adjust the steeping time ( at least 10 seconds more each time)

If your oolong tea is light-fermented, then use a water at 85 degrees celsius, for a more fermented Oolong or a dark roast, you need a water at 95 degrees.

Black tea

1. Bring water to a boil.
2. Warm your teapot by pouring the hot water in.
3. Put the right quantity of tea in the pot. Pour a bit of water in it and discard the water right away. It will open the leaves for the first brew.
4. Fill the pot with boiling water and let it steep, please follow the indications regarding the length of steeping.
5. Your infusion is ready, you can now enjoy your tea.
6. For the next brewings (2-4), adjust the steeping time ( at least 10 seconds more each time)

If you have a good quality black tea, a good control of the steeping duration will prevent the tea from tasting bitter.

Pu-Er tea

1. Bring water to a boil.
2. Warm your teapot by pouring the hot water in.
3. Put the right quantity of tea in the pot. Pour a bit of water in it and discard the water right away. It will open the leaves for the first brew. For some old Pu-Er cakes, we recommend that you rinse the tea twice.
4. Fill the pot with hot water and let it steep, please follow the indications regarding the length of steeping.
5. Your infusion is ready, you can now enjoy your tea.
6. For the next brewings (2-4), adjust the steeping time ( at least 10 seconds more each time)

A very hearty taste, use boiling water but control carefully how long you let it steep. A good Pu-erh tea can be steeped many many time, the norm being 5 or 6 times but for very good Pu-Ers it can be 10 or 12 times !

Flowers ( Rosen, Osmanthus)

Same process as for black tea if you want to try them on their own. If you add them to a tea, then please follow the brewing indications for this particular tea.

Jasmine green tea

1. Bring water to a boil.Let it cool down to 70-80°C.
2. Warm your teapot by pouring the hot water in.
3. Put the right quantity of tea in the pot. Pour a bit of water in it and discard the water right away. It will open the leaves for the first brew.
4. Fill the pot with hot water and let it steep, please follow the indications regarding the length of steeping. Good jasmine teas do not need to steep for a long time otherwise they will become bitter.
5. Your infusion is ready, you can now enjoy your tea.
